Not every night is date night at my house but last night I decided it was. Medjool Date night, that is. 🙂 All jokes aside…last night I was thinking about YOU, my loyal friends, and I was thinking about how much temptation there is this time of year to indulge in a sweet treat. So, I decided if you can’t beat ’em, join ’em. Have a sweet treat! Just make it a healthy treat like these amazing Simple Healthy Christmas Nut and Seed Balls. (Don’t forget that portion control is important even though these are healthy, 2 or 3 will do ya!)

Simple Healthy Christmas Nut and Seed Balls
2 cups gluten free rolled oats
3/4 cup chopped pecans
1/2 cup pepitos (raw organic pumpkin seeds)
3/4 cup hemp seeds
1/2 cup goji berries (soak for 5 minutes in warm water – then drain)
1/3 – 1/4 cup of organic ground coffee
2 cups organic Medjool dates (pitted – then use 1/2- 3/4 cup water to make date paste in a food processor or blender)
1 tsp vanilla extract
1/2 cup organic unsweetened shredded coconut
1/4 cup chia seeds
1/2 cup crushed almond slices
Combine first 8 ingredients into a mixing bowl and mix well with hands. Roll into small to medium bite-sized balls then roll into the coconut, chia seed, and/or almond slices. Place on parchment paper. Serve immediately or refrigerate for up to 3-5 days in air-tight container.
