Vegan Lentil Stew

Awesome vegan lentil stew recipe to warm you up on a cold day.

Nothing like good lentil stew to warm you after a cold winter day!

When the chill of winter sets in and the wind howls outside, there’s something immensely comforting about a steaming bowl of hearty lentil stew. The combination of tender lentils, aromatic spices, and a medley of vegetables makes for a wholesome and nourishing meal that warms both the body and the soul.

Ingredients: Vegan Lentil Stew

  • 1 1/2 cups dried lentils, green or brown lentil sorted and rinsed
  • 1/4 cup water
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 stalks celery, chopped
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon ground paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon dried thyme
  • 1 1/2 cups diced tomatoes
  • 2 medium carrots, diced
  • 1 medium potato, diced
  • 6 cups vegetable broth
  • 1 bay leaf
  • 1/4 teaspoon Cayenne pepper

Instructions

  1. Heat water in a large saucepan over medium heat. Add onions and cook for about 3 minutes. Add garlic and cook for another minute
  2. stir in celery, Italian seasoning, paprika, cumin, and thyme, and cook for 30 seconds.
  3. Add lentils, tomatoes, carrots and potatoes, bay leaf, and vegetable broth.
  4. Bring to boil, reduce heat to simmer for about 40 minutes or until stew has reached the desired texture.
  5. Remove bay leaf and serve
